Method
- 1. In a medium-sized bowl, whisk together flour, sugar, baking powder, and salt until well combined.
- 2. In a separate bowl, whisk together milk, eggs, and vanilla extract until well combined.
- 3. While whisking, gradually add the dry ingredients to the wet, stirring until the mixture is smooth and combined. Set aside.
- 4. Fill a medium-sized saucepan 2-3 inches deep with vegetable oil. Set on the stovetop over medium-low heat. Heat the oil to 370°F - 375°F (187°C - 190°C).
- 5. Once the oil is heated, portion about ½ - ⅓ cup of batter into a liquid measuring cup. Slowly drizzle the batter into the oil in a thin stream, swirling and crisscrossing the batter over itself. Cook on each side until golden brown (about 90 seconds per side), then remove to a paper towel-lined plate.
- 6. Dust with powdered sugar and serve warm.
- 7. Repeat with the remaining batter, but make sure that the oil returns to temperature between batches.
