Ingredients

  • 1 tablespoon olive oil
  • 1 white onion
  • 1 green bell pepper
  • 1 pound smoked sausage
  • 3 Roma tomatoes
  • 3 cloves garlic
  • 1 bay leaf
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon Ground black pepper
  • 1 pound okra
  • 8 cups vegetable broth
  • 1 tablespoon lemon juice Optional for serving
  • 2 tablespoon hot sauce Optional for serving

Method

  1. Add the olive oil to a large pot or Dutch oven set over medium heat, then add the diced onion and bell pepper and cook until softened, about 5 minutes.
  2. Stir in the sliced sausage and cook until the sausage starts to brown around the edges.
  3. Add the tomatoes, garlic, bay leaf, cayenne, salt, and black pepper, and cook for 2-3 minutes or until the tomatoes soften and the garlic becomes fragrant.
  4. Stir in the okra, vegetable broth, lemon juice, and hot sauce, and bring it to a boil over high heat. Reduce the heat to low and cook for 30 minutes or until the broth has reduced a bit and the okra is cooked through.
  5. Garnish with fresh chopped parsley and fresh bread, if desired.
