I’ve tried a lot of kabob recipes over the years, and this one keeps winning for a few simple reasons.

The marinade does all the heavy lifting. You whisk five ingredients together, toss in your chicken and veggies, and walk away. No complicated techniques, no specialty ingredients.

They’re flexible. Don’t like zucchini? Use mushrooms. Out of red peppers? Cherry tomatoes work great. The recipe bends to whatever you have in the fridge.

They’re a complete meal on a stick. Protein, vegetables, and serious flavor all together. Serve over rice and you’re done.

Kids actually eat them. There’s something about food on a skewer that gets even picky eaters interested.

What You’ll Need

For the marinade:

  • ¼ cup olive oil
  • ⅓ cup soy sauce
  • ¼ cup honey
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

For the kabobs:

  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 2 small zucchini, cut into 1-inch slices
  • 1 red onion, cut into 1-inch pieces
  • 1 tablespoon chopped parsley, for garnish

A quick note on the chicken. Breasts work great here, but boneless skinless chicken thighs are an excellent swap if you prefer dark meat. Thighs are more forgiving and stay juicier if you accidentally overcook them.

How to Make Grilled Chicken Kabobs

Step 1: Make the Marinade

Grab a large bowl and whisk together the olive oil, soy sauce, honey, minced garlic, and a good pinch of salt and pepper. Give it a taste. It should hit sweet, salty, and savory all at once. That balance is what makes the chicken so addictive.

Step 2: Marinate the Chicken and Veggies

Add the chicken pieces, bell peppers, zucchini, and red onion to the bowl. Toss everything until each piece is well-coated. Cover with plastic wrap or a lid and refrigerate for at least 1 hour.

If you have more time, marinate for up to 8 hours. The longer the soak, the deeper the flavor. Just don’t go past 8 hours with chicken, since the soy sauce can start to break down the texture and make it mushy.

Step 3: Soak the Skewers

This is the step everyone skips, and then regrets. If you’re using wooden skewers, drop them in cold water and let them soak for at least 30 minutes. Dry skewers will burn, catch fire, and snap when you try to eat off them. Soaking solves all of those problems.

If you have metal skewers, you can skip this step entirely.

Step 4: Preheat and Thread

Preheat your grill or grill pan to medium-high heat. While it heats up, thread the chicken and vegetables onto the skewers. Alternate the pieces so you get a mix of chicken and veggies on each one. This isn’t just for looks. It actually helps everything cook more evenly.

Don’t pack the pieces too tightly. Leaving a little space between them lets the heat reach every surface.

Step 5: Grill the Kabobs

Place the skewers on the hot grill and cook for 5 to 7 minutes per side. You’re looking for visible grill marks, golden edges on the chicken, and slightly charred vegetables. The chicken should reach an internal temperature of 165°F if you want to be precise about it.

Step 6: Garnish and Serve

Pull the kabobs off the grill, sprinkle with chopped fresh parsley, and serve immediately.

No Grill? No Problem.

If you don’t have a grill or it’s pouring rain outside, the oven broiler works beautifully. Here’s how:

  1. Preheat your broiler.
  2. Coat a sheet pan with cooking spray.
  3. Place the skewers in a single layer on the pan.
  4. Broil for 5 minutes, flip, and broil for another 5 minutes.

You’ll get caramelized edges and juicy chicken without ever stepping outside.

Tips for the Best Chicken Kabobs

Cut everything the same size. Aim for 1-inch pieces across the board. Uniform sizing means everything cooks at the same rate, so nothing is raw and nothing is overdone.

Don’t skip the marinade time. One hour is the minimum for flavor to actually penetrate the chicken. If you can do 4 to 8 hours, do it.

Pat the chicken dry before grilling. Use tongs to lift the kabobs out of the marinade and let any excess drip off. Wet chicken steams instead of searing.

Make extra. These reheat beautifully and make incredible lunches the next day. Serve cold over salad or warm over rice.

Safety tip for kids. For little ones, slide the chicken and vegetables off the skewer and onto their plate. Skewers can be dangerous for small kids to eat from directly.

Vegetable Substitutions

The veggie combination in this recipe is just a suggestion. Use whatever you love. Some great swaps:

  • Mushrooms (cremini or button)
  • Cherry tomatoes
  • Pineapple chunks (especially good with this marinade)
  • Asparagus pieces
  • Small potatoes (parboil first)
  • Yellow squash
  • Eggplant chunks

How Long Should You Marinate Chicken?

One hour is the minimum to actually taste the marinade in the chicken. The flavors get bolder the longer you marinate, with 4 to 8 hours being the sweet spot. Beyond 8 hours, the acid in the soy sauce starts to break down the protein structure and the texture turns mushy. Set a reminder if you’re going to be gone all day.

What to Serve With Chicken Kabobs

Kabobs are a meal in themselves, but a good side dish takes them to the next level. Some favorites:

  • Cilantro lime rice
  • Greek salad

  • Grilled corn on the cob
