Making Southern Fried Potatoes and Sausage brings back memories of my early cooking days. I remember experimenting with garlic amounts—my husband thought garlic was enough, while I was all in for more. This dish is a mix of smoky sausage and crispy potatoes that just works in one pan.
The sautéing technique plays a crucial role here. Browning the sausage, onions, and garlic first creates depth through the Maillard reaction, adding richness to every bite and turning this simple dish into something satisfying.
Ingredients in Southern Fried Potatoes and Sausage
This recipe shines because of its straightforward ingredients, each playing a key role in the final dish. Let’s break down what you’ll need.
- Olive Oil: Used for sautéing, it adds richness and helps everything cook evenly. Don’t skimp on this; it’s essential for flavor.
- Smoked Sausage: Provides a punch of smoky flavor that makes the dish work. Get a good quality sausage for the best taste.
- Onion: Adds savory depth. Chop it well; you want it to cook evenly with the garlic.
- Garlic: Brings a fragrant kick that complements the sausage. Fresh minced garlic is always best, but pre-minced can save time.
- Russet Potatoes: The starchy base that gives the dish its heartiness. Dice them evenly for consistent cooking.
- Salt: Enhances all the flavors. Adjust to taste, especially if your sausage is already salty.
- Black Pepper: Adds a bit of heat and balances the richness. Freshly cracked is preferable for more flavor.
- Water: Helps tenderize the potatoes. Don’t skip this step for that fork-tender texture.

How to Make Southern Fried Potatoes and Sausage
This dish comes together in about 40 minutes, including prep and cook time. It’s a straightforward process that brings out the best flavors in every ingredient.
Brown Sausage: Heat a 12-inch skillet on medium-high heat. Add 3 tablespoons olive oil, then toss in the smoked sausage, 1 large onion, and garlic. Cook for about 3-4 minutes until everything’s browned. The sausage should have a nice color.
Set Aside: Once browned, remove the sausage and veggies to a plate and set aside. This keeps them from overcooking and allows the flavors to meld later.
Cook Potatoes: In the same skillet, add the diced russet potatoes, 1 teaspoon salt, and ½ teaspoon black pepper. Cook for 5 minutes, stirring occasionally. The potatoes should start to soften but not brown yet.
Add Water: Pour in ½ cup of water and reduce the heat to medium-low. Cover the skillet and let it cook for 10 minutes. Give the potatoes a toss halfway through. They should begin to look tender and absorb the flavors.
Finish Cooking: Remove the lid, turn the heat back up to medium-high, and cook for another 10 minutes or until the potatoes are fork-tender. Add the sausage and onions back in, tossing everything together. Look for a nice golden edge on the potatoes.
Enjoy your meal, and don’t forget to share it with someone who loves hearty comfort food!
Switch It Up: Easy Variations
Life’s busy, and sometimes you need to shake things up a bit. Here are some variations that’ll keep this dish fresh while using the original recipe as a base.
- Oil Swap: You might consider using butter for a richer Southern flavor.
- Sausage Variation: Want to change up the protein? Try using different sausages. Each will bring its own twist to the dish.
- Potato Options: Swap out the russet potatoes for other varieties. Each has its own texture and flavor, making it fun to experiment.
- Onion Choices: You can use white, yellow, or red onions instead of the specified onion.
- Vegetable Additions: Consider adding green beans, bell peppers, or other favorite veggies. They’ll bulk up the dish and add color and nutrients.
- Healthy Add-In: You can add finely chopped kale for a healthy boost.
- Spice It Up: Add red pepper flakes or hot sauce for a spicy kick.
These tweaks are easy to implement and can make mealtime a bit more exciting!

Keeping Leftovers Fresh
Store any leftovers in an airtight container in the fridge for up to 3-4 days. If you want to keep it longer, it freezes well for about 3 months. Let it cool down before sealing it up; this helps prevent condensation and keeps it from getting soggy.
When you’re ready to reheat, use a skillet over low heat. Add a splash of water to help revive the moisture, and stir often to keep everything from sticking or burning. You’ll want those potatoes to stay crisp-tender, so take your time with it. Enjoy those leftovers!
